I love tacos. I think I could eat them everyday and never get tired of them! There are so many different ways of making tacos and I love trying all the different variations! These Slow Cooker Barbacoa Tacos are one of my absolute favorites!
Last month I started a Book Club (aka wine night, because lets be real, we talk about the book of the month for like 5 minutes) and these Slow Cooker Barbacoa Tacos were a HUGE hit! I actually almost ran out of tortillas and I had 24! This Slow Cooker Barbacoa recipe is super easy, and while it’s cooking for 8 hours, all you have to do is prep the toppings!
I love making this Avocado Cream Sauce to compliment the tacos. The sauce is not only super light and easy but it’s packed with avocado and greek yogurt, adding the most perfect flavor to the tacos!
I then top the tacos with queso fresco, chopped red onion, cilantro, and fresh squeezed lime!
When it comes to choosing tortillas, I often find that corn tortillas can be a little tricky to pick out. Some corn tortillas are more dry than others, causing the tortilla to break apart while eating. I’ve tried a lot of different kinds of tortillas and my favorite are La Tortilla Factory Yellow Corn Tortillas. They are delicious, moist, and don’t fall apart!
